Taco Tater Tot Casserole

Ingredients

  • 1 lb Ground Beef
  • 32 oz Bag of Tater Tots
  • 1 med Onion, diced
  • 1 Green Bell Pepper
  • 1 Orange Bell Pepper
  • 1 Red Bell Pepper
  • 2 Cloves Garlic
  • 1 pkg Taco Seasoning
  • 1/2 cup Water
  • 1/2 cup Salsa
  • 1 15oz Can of Corn
  • 1 15oz Can of 3 blend beans Black Beans is also a good choice
  • 2 cups Cheddar Cheese
  • 1 Can of Enchilada Sauce

Instructions

  • Preheat oven to 350 degrees
  • Brown the Ground Beef
  • Add Taco seasoning and 1/2 cup of water
  • Stir in onions, bell peppers, and garlic cloves
  • Heat until onions and bell peppers have softened
  • Add can of three blend beans (or black beans)
  • Pour mixture into a large mixing bowl
  • Add Corn, Salsa, Enchilada Sauce, and 1 cup of Cheddar Cheese
  • Mix Well
  • Pour Mixture into a 9x13 baking dish
  • Place tater tots across the top
  • Bake in the oven for 50 minutes.
  • Add remaining cheese to the top and back for an additional 5 minutes, or until the cheese is melted and bubbling.
