Casserole dishes are great to make for the family or for a potluck dinner. Tater tot casserole is a classic choice. What I like about tater tot casserole is the different versions of it you can make. You can make a Chicken Bacon Ranch Tater Tot Casserole dish. This is always a crowd pleaser. You can make a simple classic Tater Tot Casserole dish also. If you like Tater Tot Casserole, but want to try another twist, why not make it a Taco Tater Tot Casserole night?
The ingredients have all you would expect for a delicious Mexican dish. This includes ground beef, salsa, onions, bell peppers, beans, and enchilada sauce to name a few. When you combine these ingredients with tater tots and cheese, you are sure to bring smiles across your dining room table.
In this recipe I used three different types of bell peppers. I used green, red, and orange (about 1/3 of each). This added nice color to the casserole dish. However, you could choose to only use one or two different types if you prefer.
Traditionally, black beans is a favorite choice for this dish. However, I used one can containing a three bean mixture for my dish. This is a matter of personal preference. Feel free to use your favorite, or experiment with the different flavors of beans. It is always good to change things up a bit.
Another variation I used was green enchilada sauce instead of the traditional red. I like both sauces and like to switch them out from time to time. Either one you choose will be a hit with your family.

Taco Tater Tot Casserole
Ingredients
- 1 lb Ground Beef
- 32 oz Bag of Tater Tots
- 1 med Onion, diced
- 1 Green Bell Pepper
- 1 Orange Bell Pepper
- 1 Red Bell Pepper
- 2 Cloves Garlic
- 1 pkg Taco Seasoning
- 1/2 cup Water
- 1/2 cup Salsa
- 1 15oz Can of Corn
- 1 15oz Can of 3 blend beans Black Beans is also a good choice
- 2 cups Cheddar Cheese
- 1 Can of Enchilada Sauce
Instructions
- Preheat oven to 350 degrees
- Brown the Ground Beef
- Add Taco seasoning and 1/2 cup of water
- Stir in onions, bell peppers, and garlic cloves
- Heat until onions and bell peppers have softened
- Add can of three blend beans (or black beans)
- Pour mixture into a large mixing bowl
- Add Corn, Salsa, Enchilada Sauce, and 1 cup of Cheddar Cheese
- Mix Well
- Pour Mixture into a 9×13 baking dish
- Place tater tots across the top
- Bake in the oven for 50 minutes.
- Add remaining cheese to the top and back for an additional 5 minutes, or until the cheese is melted and bubbling.
