If you are looking for an easy and versatile meal, we have you covered. Pork Carnitas are easy to make in the Instant Pot. Once they are made there are a number of ways you can serve them. They can be served over chips for Cowboy nachos. They can also be served in a tortilla with rice and your favorite toppings. If you prefer, they can also be served by themselves along with your favorite barbeque sauce. Whichever way you decide to serve them to your family, they are sure to love them. So, let’s get cooking!
Ingredients:
- 3 1/2 to 4 lbs. pork shoulder roast
- 3/4 cup (6oz) of chicken broth
- 3/4 cup (6oz) of orange juice
- 3 tbsp of lime juice
- 1 tbsp of chili powder
- 1/2 tsp of paprika
- 1 tsp of oregano
- 1 tsp of ground cumin
- 1/2 tsp of salt
- 1/4 tsp of pepper
- Olive or vegetable oil (about 3 tbsp)
- 1 diced onion (red onion is recommended)
- 1 diced jalapeno
- 2-3 cloves of chopped garlic
Directions:
Step 1 – Mix the chili powder, paprika, oregano, and ground cumin together in a mixing bowl. Then pour in the chicken broth, orange juice, and lime juice to your seasonings.
Step 2 – Cut the pork roast into several small chunks.
Step 3 – On the Instant Pot, select the “Sauté” button. The pour in about a tbsp of oil into the pot. Then place a few chunks of the pork roast into the pot and sear on each side. Once the first batch is seared, set it aside into a separate pan and repeat the process until all the meat has been seared. (NOTE: leave the lid off the Instant Pot during this process)
Step 4 – Add about 2 tbsp of oil to the pot. Stir in the chopped onion, chopped jalapeno, and the garlic. Stir occasionally until all the ingredients are soft.
Step 5 – Add the pork roast back into the Instant Pot. Pour in the broth mixture. Close the lid and ensure that the steam release handle is in the proper position.
Step 6 – Select the “Meat” button and set the time to 30 minutes. When the time has expired, release the steam handle until all the steam has dissipated. Then remove the lid.
Step 7 – Using tongs, pull the meat out of the Instant Pot and place in a baking sheet. Use two forks to pull the pork apart. The meat should be very tender at this point.

- 1 Diced Jalapeno

Instructions
- Mix the chili powder, paprika, oregano, and ground cumin together in a large mixing bowl. Add the chicken broth, orange juice, and lime juice to your seasonings. Then set it aside.
- Cut the pork roast into several small chuncks
- Select the "Sauté" button on the Instant Pot. Coat the bottom of the pot with oil (about one tablespoon). Then place a few chunks of the roast in the pot and sear on each side. Set the seared meat aside into a separate pan. Repeat the process until all the meat has been seared. (NOTE: you will want to leave the lid off during the searing process)
- Add about 2 tablespoons of oil to the Instant Pot. Stir in the chopped onion, jalapeno, and the chopped garlic. Stir occasionally until all the ingredients have softened.
- Add the pork roast back into the Instant Pot. Pour in the broth mixture. Close the lid and ensure that the steam release handle is in the sealed position.
- Select the "meat" button and set the timer to 30 minutes. When the time has expired, release the steam handle until all the steam has dissipated. Remove the lid.
- Use tongs to remove the meat from the Instant Pot and place on a baking sheet. Use two forks to pull the meat apart. The meat should be very tender and juicy at this point.
